Molasses-Ginger Cookies

Makes 14 big cookies

“I made these and actually forgot to add the ginger. They’re pretty good that way though! I dunno how it would have been if I wouldn’t have forgotten the ginger, but I bet they’re good both ways! I didn’t have parchment paper by the way, but I greased the baking sheet and they came right off afterward.”

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 3/4 cup packed dark brown sugar
  • 1 large egg
  • 3/4 cup unsulfered molasses
  • Granulated sugar, for sprinking1. Heat over to 375 degrees (F). Line 2 baking sheets with parchment paper. In a bowl, whisk flour, ginger, cinnamon, baking soda and salt.

    2. In a large bowl, beat butter and brown sugar until fluffy. Beat in egg and molasses. Beat in flour mixture, half at a time.

    3. Drop dough by 1/4 cupfuls 3 inches apart onto prepared baking sheets. Sprinle with sugar. Bake 10 to 12 minutes or until set at edges but still soft in centers. Let stand 5 minutes on baking sheets before removing to wire racks to cool completely.
