Cream Cheese Crepes with Spiced Strawberry Sauce

“I came up with this based on a basic crepes recipe and another for the sauce. It’s pretty tasty and can be used for breakfast or a nice dessert.”
Ingredients
1 cup flour
3 eggs
1/2 cup milk 
1/2 cup water
1/4 teaspoon salt
1 Tablespoon sugar
1/8 teaspoon vanilla
6-8 ounces cream cheese, softened
Cinnamon and sugar, to taste
1 cup sugar
1 cup water
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 Tablespoon vanilla
2 pints strawberries, hulled and sliced
1. Whisk together flour, sugar and eggs. Gradually add milk and water, stirring to combine. Add salt. Beat until smooth. Cover and put in ‘fridge for about an hour.
To make sauce: In a saucepan, stir together water and sugar. Bring to a boil; cook 10 minutes or until syrupy. Mix in nutmeg and cinnamon. Remove from heat. Stir in vanilla. Allow to cool for a few minutes.
To make filling: Beat cream cheese, cinnamon and sugar until smooth.
To cook crepes: Lightly oil griddle or skillet and heat over medium-high heat. Pour batter (about 1/4 cup for each crepe) into skillet. Tilt pan in circular motion so batter coats surface evenly.
Cook about 2 minutes or until the bottom is lightly browned. Loosen with spatula and flip crepe to cook the other side.
Spread filling on warm crepe and roll up. Top with strawberries and sauce. (You can also mix sauce/berries with filling!)
