Makes six 4&#8243; pancakes</p>
<p><em>&#8220;I must&#8217;ve done something wrong with this recipe because I made a whole lot more than six.  They&#8217;re really good though.  I didn&#8217;t do the strawberry sauce with these, but I bet it&#8217;s delicious!&#8221;</em></p>
<p><strong>Ingredients</strong><br />
1 cup quick-cooking oats<br />
3 1/2 cups milk<br />
2 cups all-purpose flour<br />
1/4 cup margarine or butter, melted<br />
3 Tablespoons sugar<br />
1 Tablespoon baking powder<br />
2 eggs<br />
Strawberry Sauce (bottom)</p>
<p>1. Mix oats and milk in large bowl; let stand 5 minutes.  Add remaining ingredients except strawberry sauce.  Beat mixture with electric mixer on medium speed until well blended.</p>
<p>2.  Heat griddle or skillet over medium hear or to 375 degrees.  Grease heated griddle, if necessary.</p>
<p>3. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle.  Cook pancakes until puffed and dry around edges.  Turn to cook other side until golden brown.</p>
<p><strong>Strawberry sauce:</strong><br />
1 package (10 ounces) frozen sliced strawberries, thawed<br />
2 teaspoons cornstarch</p>
<p>Drain strawberries; reserve liquid.  Combine liquid and cornstarch in small pan.  Cook over medium heat about 1 minute or until mixture boils.  Stir in strawberries and cook 1 minute.</p>

<p>1. Crumble and cook sausage in large skillet over medium heat until browned. Stir in flour until dissolved. Gradually stir in milk. Cook gravy until thick and bubbly. Season with salt and pepper. Serve hot over biscuits. Refrigerate leftovers.</p>

1/8 c. green pepper, finely chopped<br />

3-4 breakfast sausage links, cooked and cut up<br />
Tortilla shells, warmed<br />
Salsa</p>

<p><strong>Ingredients</strong></p>
<p>1 cup flour<br />
3 eggs<br />

1/2 cup water<br />
1/4 teaspoon salt<br />
1 Tablespoon sugar<br />
1/8 teaspoon vanilla<br />
6-8 ounces cream cheese, softened<br />
Cinnamon and sugar, to taste<br />
1 cup sugar<br />
1 cup water<br />
1/2 teaspoon cinnamon<br />
1/4 teaspoon nutmeg<br />
1 Tablespoon vanilla<br />
2 pints strawberries, hulled and sliced</p>
<p>1. Whisk together flour, sugar and eggs. Gradually add milk and water, stirring to combine. Add salt. Beat until smooth. Cover and put in ‘fridge for about an hour.</p>
<p>To make sauce: In a saucepan, stir together water and sugar. Bring to a boil; cook 10 minutes or until syrupy. Mix in nutmeg and cinnamon. Remove from heat. Stir in vanilla. Allow to cool for a few minutes.</p>
<p>To make filling: Beat cream cheese, cinnamon and sugar until smooth.</p>
<p>To cook crepes: Lightly oil griddle or skillet and heat over medium-high heat. Pour batter (about 1/4 cup for each crepe) into skillet. Tilt pan in circular motion so batter coats surface evenly.</p>
<p>Cook about 2 minutes or until the bottom is lightly browned. Loosen with spatula and flip crepe to cook the other side.</p>
<p>Spread filling on warm crepe and roll up. Top with strawberries and sauce. (You can also mix sauce/berries with filling!)</p>
