<p><em>A tasty alternative to the usual zucchini bread.  Especially good for the chocolate lovers!</em></p>

<p><strong>Ingredients</strong><br />
2 (1 ounce) squares unsweetened chocolate<br />
3 eggs<br />
2 cups white sugar<br />
1 cup vegetable oil<br />
2 cups grated zucchini<br />
1 teaspoon vanilla extract<br />
2 cups all-purpose flour<br />
1 teaspoon baking soda<br />
1 teaspoon salt<br />
1 teaspoon ground cinnamon<br />
3/4 cup semisweet chocolate chips</p>
<p>1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9&#215;5 inch loaf pans. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.</p>
<p>2. In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared loaf pans.</p>
<p>3. Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.</p>

<p><strong>Ingredients: </strong><br />
1 T butter, softened or melted<br />
1/3 c warm water (110-115 degrees)<br />
1 egg<br />
1 t sugar<br />
3/4 t salt<br />
1/8 t garlic powder<br />
1 T parsley<br />
1 t onion powder<br />
1/4 c grated parmesan cheese<br />
1 pkg. (2 1/4 t) dry yeast<br />
1 1/2-2 c flour</p>
<p>Instructions:<br />
. In bowl, combine water, egg, and butter, mixing well.<br />
2. Add dry ingredients and mix well. Knead in enough flour to make a dough.<br />
3. Separate dough into 24 pieces and roll each into a 3-inch log. Place logs in a greased 9 x 13 baking pan.<br />
4. Cover and let set in a warm place for 25 minutes.<br />
5. Uncover, place in oven, and heat oven to 350 degrees. Bake for 15 minutes after oven is up to temperature (probably about 20 minutes altogether), until edges are golden.</p>

<p><strong>Ingredients:</strong><br />
2 Tbsp sugar<br />
2 Tbsp cooking oil<br />
2 tsp salt<br />
2 cups hot tap water<br />
4 1/2 &#8211; 5 cups flour<br />
2 Tbsp instant yeast<br />
1 egg<br />
2 Tablespoons milk</p>
<p>1. Mix sugar, oil, salt, hot water and flour. Add yeast to a little flour and add while dough is still soft. Add enough flour to make a dough that holds together in a ball shape and is not sticky if you handle it with floured hands. Cover. Let rise until double, about 1/2 hour. Divide in half.</p>
<p style="text-align: left;">2. Roll out to about 12&#215;15” rectangle. Roll up jelly roll style and place on greased cookie sheet (or cover cookie sheet with Parchment paper). Cut diagonal slits on top. Let rise about 30 &#8211; 45 min.</p>
<p style="text-align: left;">3. Beat egg and milk together in small bowl.  Brush on tops.</p>
<p style="text-align: left;">4. Bake at 400F for 20 min, or until golden.</p>

Makes two loaves</p>
<p><strong>Ingredients</strong><br />
1 1/2 cups warm water<br />

4 tsp melted butter or oil<br />
2 tbsp sugar<br />
1 tbsp salt<br />
1 tsp Italian seasoning<br />

1 egg white, for glaze</p>
<p>1. Combine warm water and yeast.  Mix until dissolved.  Let sit for a few minutes.</p>
<p>2. Combine all ingredients except egg white.  Mix well.</p>
<p>3. Knead dough 10 minutes on lightly floured surface.  Cover and let rise in warm place for 1 hour.  Punch down, let rise for 1 hour again.  Punch down again.</p>
<p>4. Preheat oven to 350° F</p>
<p>5. Shape dough into loaves, slice top (see picture.  It just makes it look pretty), and let it rise for 15 minutes. </p>
<p>6. Bake for 20 minutes.  Remove and glaze top with egg white.  Bake 10 minutes more.</p>

Makes 12 bagels</p>
<p><strong>Ingredients</strong><br />
1 1/2 c. warm water (112-115°)<br />
2 T. dry active yeast<br />
3 T. sugar<br />
1 T. salt<br />
3 1/2 c. bread flour<br />
8 c. water (to boil)<br />
1 eggs white, lightly beaten<br />
1 T. water</p>
<p>1. Mix yeast, sugar and warm water.  Let stand 3 minutes.</p>
<p>2. Mix 2 cups flour with salt; add yeast mixture.  Stir until combined.  Slowly mix in remaining flour.</p>
<p>3. Knead dough for 5 minutes.  Dough should be fairly smooth and somewhat firm.  Place dough in greased bowl, cover and let rise double.</p>
<p>4. Punch down dough and divide into 12 balls.  Rest 5 minutes.</p>
<p>5. Bring water to a boil.  Make hole in each ball with thumb and pull open about 2 inches, making bagel shape.</p>
<p>6. Preheat oven to 350°F.  Reduce heat of water to simmer.  Drop 2-3 bagels into water for about 45 seconds, turning each once halfway through.</p>
<p>7. Drain on wire rack.  Place on greased baking sheets.  Mix egg white with 1 T. water.  Brush tops with mixture and add additional toppings, if desired.</p>
<p>8. Bake 35 minutes, turning once.  Bagels will be lightly browned and shiny.</p>
<p>Topping suggestions: minced onion, garlic, poppy seeds, sesame seeds, etc.<br />
Mix-in suggestions (add during step 2): Raisins, blueberries, cinnamon, etc.</p>

<p><strong>Ingredients</strong><br />
3 very ripe large bananas<br />
2 eggs<br />
1/2 cup butter or margarine<br />
1 1/2 Tablespoon buttermilk OR sour cream<br />
1 teaspoon fresh lemon juice<br />
1 cup sugar<br />
2 cups all-purpose flour<br />
1 1/2 teaspoon baking powder<br />
1/2 teaspoon baking soda<br />
1 cup chopped walnuts or pecans</p>
<p>1. Place bananas, eggs, butter, buttermilk or sour cream, lemon juice and sugar into a blender or food processor and blend until smooth.</p>
<p>2. Mix together flour, baking powder and baking soda.</p>
<p>3. Pour banana mixture over flour mixture and stir just until moistened.  Stir in nuts.4.  Turn into greased 9.5-by-4.5-inch loaf pan or into two 3.5-by-7.5-inch pans.</p>
<p>5.  Bake at 350 degrees (F) for 55 &#8211; 60 minutes or until toothpick inserted into center comes out clean.</p>
<p>6. Allow to cool 5 minutes in pan, then turn out onto wire racks.</p>
<p>7. Once cooled, wrap bread and wait 24 hours before slicing.</p>
