Homemade Bagels

Makes 12 bagels

Ingredients
1 1/2 c. warm water (112-115°)
2 T. dry active yeast
3 T. sugar
1 T. salt
3 1/2 c. bread flour
8 c. water (to boil)
1 eggs white, lightly beaten
1 T. water

1. Mix yeast, sugar and warm water.  Let stand 3 minutes.

2. Mix 2 cups flour with salt; add yeast mixture.  Stir until combined.  Slowly mix in remaining flour.

3. Knead dough for 5 minutes.  Dough should be fairly smooth and somewhat firm.  Place dough in greased bowl, cover and let rise double.

4. Punch down dough and divide into 12 balls.  Rest 5 minutes.

5. Bring water to a boil.  Make hole in each ball with thumb and pull open about 2 inches, making bagel shape.

6. Preheat oven to 350°F.  Reduce heat of water to simmer.  Drop 2-3 bagels into water for about 45 seconds, turning each once halfway through.

7. Drain on wire rack.  Place on greased baking sheets.  Mix egg white with 1 T. water.  Brush tops with mixture and add additional toppings, if desired.

8. Bake 35 minutes, turning once.  Bagels will be lightly browned and shiny.

Topping suggestions: minced onion, garlic, poppy seeds, sesame seeds, etc.
Mix-in suggestions (add during step 2): Raisins, blueberries, cinnamon, etc.
