Banana Nut Bread

Source: My Great Recipes - section 23, card 22.
Makes one 9.5 x 4.5″ loaf or two 3.5 x 7.5″ loaves      

“Using this recipe, the bread turned out perfectly moist.  I made two loaves and froze the second one.  BTW, I used sour cream and didn’t use nuts.”

Ingredients
3 very ripe large bananas
2 eggs
1/2 cup butter or margarine
1 1/2 Tablespoon buttermilk OR sour cream
1 teaspoon fresh lemon juice
1 cup sugar
2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup chopped walnuts or pecans

1. Place bananas, eggs, butter, buttermilk or sour cream, lemon juice and sugar into a blender or food processor and blend until smooth.

2. Mix together flour, baking powder and baking soda.

3. Pour banana mixture over flour mixture and stir just until moistened.  Stir in nuts.4.  Turn into greased 9.5-by-4.5-inch loaf pan or into two 3.5-by-7.5-inch pans.

5.  Bake at 350 degrees (F) for 55 - 60 minutes or until toothpick inserted into center comes out clean.

6. Allow to cool 5 minutes in pan, then turn out onto wire racks.

7. Once cooled, wrap bread and wait 24 hours before slicing.
